Crafted by Bastien Warskotte, in collaboration with Champagne-born winemakers Antoine and Maxime Bouvet, this wine is a subtle dialogue between East and West.
Made from a blend of three indigenous Georgian grape varieties—Tsolikouri, Tsitska, and Aladasturi—this Petillant Naturel (Pet-Nat) is produced with minimal intervention and maximum care. Each grape is harvested at peak ripeness, in different regions and times, bringing a layered complexity to the final blend. Fermentation takes place in old French oak barrels, preserving texture while allowing the natural character of each grape to shine.
The result is an elegant, bone-dry sparkling wine, with a lively yet refined mousse, notes of stone fruit and tea leaf, and a mineral, persistent finish. Bottled without fining or filtration, it speaks clearly of Georgia’s evolving natural wine movement—clean, honest, and deeply rooted in place.
